Ingredients
1 large Butternut Squash-cut into small pieces2T coconut oil1 sm onion-chopped1 large clove garlic4 c chicken stock1 T fresh ginger-grated
Directions
saute onion and garlic in coconut oil. Add butternut squash and chicken stock. grate ginger to taste. cover and simmer til squash is tender. Blend in a blender and return to pot. Makes 8 servings
