Roasted Red Pepper and Carrot Soup

Ingredients
2 onions, chopped4 garlic cloves, sliced1 c. red pepper, chopped2 large carrots, chopped3 c. beef broth3 c. water1 c. white rice1 Tblsp. oil2 Tblsp. red wine
Directions
Heat the pot with a little oil. Add red pepper and let sear until dark on all sides. Add onions and saute.

Add broth and garlic and blend in the blender until smooth. Return to the pot.

Add remaining ingredients, except the red wine. Simmer for 40 min. Add wine, cook another 5 min. and serve.

Makes about 8 1 c. servings.
