Zesty Cucumber Salad

4 cucumbers, seeds removed and partially peeled1/2 red bell pepper, finely chopped1 medium Bermuda (red) onion, finely chopped1 tbsp chopped fresh cilantro, 1 1/4 cup of rice vinegar2 tbsp granulated sugar1/4 tsp saltcrushed red pepper to taste
Mix vinegar, sugar and salt together and simmer until sugar is dissolved and mixture starts to thicken a little. Remove from heat and let cool. Cut cucumbers in half length wise and remove seeds and cut into 1/4 inch slices. Add bell pepper, onion and cilantro and toss lightly. Mix in vinegar mixture and add crushed red pepper to taste.
Serves approximately 6-8 people.
