Sweet Potato Black Bean Soup

Ingredients
Water, 4 cups Sweet potato, 1 largeOlive Oil, 2 tbsp Yellow Onion, 1 mediumVegetable broth, 2 cupsKale, 4 cups, chopped Garlic, 3 cloves Yellow Sweet Corn, 1 cup kernelsBlack Beans, 1 can
Directions
Chop onion and cook in olive oil over low heat until the onion is soft, about 20 minutes. Chop the potato into cubes and place in pot with water on low heat. Wash and chop kale, add to pot along with the onions when they are done. Stir in the kale until it has wilted a little, then add garlic, vegetable broth, corn and black beans. Simmer on low and add salt and pepper (or other spices, depending on your preference) to taste.
Makes approximately 6 generous servings (2 cups)
