Greek Lentil Soup

Lentils, spinach, tomatoes, whole wheat noodles, onions, carrots, celery
Chop the onions, carrots, and celery and saute them together in the olive oil.
When softened, add eight cups of water, lentils, a bay leaf, and the tomatoes. Bring to a boil and let simmer for 45 minutes, or until lentils are soft.
Add spinach and noodles, let cook for an additional 10 minutes or until noodles are cooked.
Flavor with salt, pepper, and lemon juice or vinegar. Serve with dollop of fat-free plain yogurt.
