Mushroom Pecan Burgers

Ingredients
1.5 lbs Cremini Mushrooms1/2 cup Parsley2 Tbsp Olive Oil2 Large Yellow Onions, finely chopped3 Large Garlic Cloves, minced2 cups Bread Crumbs or Cracker Meal3 Tbsp Tahini2 Tbsp Hoisin Sauce3/4 cup Pecans or Walnuts, Roasted & Chopped3 Tbsp Tamari (Soy Sauce)1 tsp Oregano, dried1/2 tsp Sage, dried1/2 tsp Salt & Pepper1. In Food Processor, mince mushrooms and parsley, remove and set aside.2. In a saute pan over med. heat, warm 1 tbsp olive oil and cook onions & garlic for 5 to 6 min. Transfer onion mixture to a large sized bowl and combine with minced mushrooms & parsley, bread crumbs, tahini, hoisin sauce, chopped nuts, tamari, oregano, sage, salt & pepper.3. Place mixture in refrigerator for at least half an hour.4. Mixture will be soft, but you should be able to form patties. Add additional bread crumbs or tahini, if needed.Create patties using your hands.5. In saute pan, warm remaining 1 tbsp olive oil and fry patties over med. heat for 3 to 5 min on each side, until lightly brown & crispy. Be careful to keep patties intact.Makes 8 Patties*Instead of making patties, put mixture into 5 x 9 x 2 in. loaf pan and bake @ 350 deg for 20 to 25 min.
