Crock Pot Thai Chicken

Ingredients
22 oz boneless/skinless chicken breast cut into 1/2" strips1 large bell pepper, thinly sliced1 large onion, coarsely chopped1/2 cup 99% fat free chicken broth1/4 cup lite soy sauce1 tbsp ground cumin2 tbsp minced garlic1 tbsp red pepper flakessalt & pepper to taste2 tbsp corn starch2/3 cup peanut butter1 tbsp soy sauce1/4 cup lime juice(green onions optional)
Directions
Mix together first 8 ingredients in a crockpot.. Cover and cook on low 4 1/2 - 5 hours.
Remove 1 cup of liquid from crockpot, mix with corn starch, peanut butter, 1 tbsp soy sauce and lime juice. Should mix into a thick sauce. Add back to crockpot, mix, and cook 30 more minutes. Garnish with green onions (optional, not included in nutritional information).

    Very good! I used less peanut butter and added some coconut milk and used a red pepper instead.. I did not have green onions but I think it would be a wonderful touch!! - 3/9/11
