Lo-cal Creamy Ceasar Salad Dressing or Dip

Ingredients
2-3 garlic cloves 1 tbsp best olive oil1/4 cup grated parmensan cheese1/4 cup lemon juice1/4 cup water2 tsp grey Poupon mustard1 tsp worchestershire sauce6oz soft tofu
Directions
Saute garlic that has been finely minced or pressed until translucent or just starting to brown (this gives the garlic a sweeter flavor, if you prefer the hotter garlic flavor skip this step.) Add the garlic to the other ingredients and puree until smooth. For a thicker dip consistency use less water, use more water for a thinner consistency. Add salt and freshly ground black pepper to taste.

Makes 1 cup of dressing or 16 1 tbsp servings
