Cowboy Caviar - per 1 cup serving

Ingredients
2 Tbls. red wine vinegar2 tsps Hot sauce1 1/2 tsp salad oil1 clove garlic, minced1/8 tsp pepper1 firm ripe avocado1 can of black beans1 can corn kernels2/3 cup sweet onion, chopped2/3 cup fresh cilantro, remove thick stems and chop1/2 lb. Roma tomatoes, chopped1 cup chopped bell pepper (red or green)salt to taste1/2 lime, squeezed for juice
Directions
Makes 8 1 cup servings

MIX: vinegar, hot sauce, oil, garlic, and pepper in large bowl

CUT: peel and pit avocado into cubes, add to vinegar mix in bowl.

DRAIN: (and rinse) black beans and corn.

ADD: beans, corn, onions, cilantro and tomatoes to large bowl with avocados

SALT to taste

SQUEEZE lime over all.

TOSS gently to coat.

May serve as a side dish or as an appetizer with tortilla chips
