Chorizo & Rice

Ingredients
1 small onion, finely chopped (or sub. onion flakes)1 lb. chorizo (or soy chorizo for lower fat/vegan)1 can diced tomatoes1 can garbanzo beans, rinsed & drained3 cups brown Minute rice2 1/2 cups chicken broth1 bunch cilantro, rinsed & chopped
Directions
Brown chorizo with onion until cooked through. Add diced tomatoes, garbanzo beans, and chicken stock and bring to boil. Add rice, stir and cover, removing from heat. Let sit until rice is tender. Snip one whole bunch of cilantro over pot about 1" , stems included. Stir and serve. Can eat as is or on tortillas with cheese.
