Apple Cinnamon Whole Wheat Muffins

1 C. White Flour1 C. Whole Wheat Flour1/2 C. Sugar2 tsp. baking soda2 tsp. cinnamon1/2 tsp. salt2 C. peeled chopped apples1/2 C. shredded carrots1/2 C. raisins1/2 C. shredded coconut1/2 C. walnuts or pecans1/2 C. applesauce (unsweetened)1/4 C. skim milk2 tsp. vanilla extract2 large eggs (or equivalent egg substitute)
Combine dry ingredients first. Combine apples, carrots raisins, coconut and nuts in a separate bowl and add this to the dry mixture. Next combine applesauce, milk, vanilla extract and eggs. Add to the previous mixture. The batter will be thick, keep mixing until everything is moist. Fill greased muffin tin 3/4 full. Bake at 350 for 25 minutes. Makes 12 muffins.
