Chicken breast cut in 1 inch piecesolive oilRed Peppers, coarsely choppedBaby Carrots, coarsely choppedsliced mushroomsSnow peasgarlic clovefat free catalina dressingsoy saucecrushed red peppercooked brown rice
1. Cook chicken in hot oil in large skillet on high heat for 3 minutes stirring consistently
2. Stir in vegetables and cook for an 5-6 minutes or until chicken is slightly browned.
3. Add in remaining ingredients and cook for an additional 2 minutes or until chicken is cooked through and vegetables are crisp tender, stirring occasionally.
Serve over 2 cups of cooked brown rice.
