Chicken roll-ups

20 fillo sheets, cut in half while still rolled1 lb. boneless skinless chicken breast10 oz. crimini mushrooms, chopped1 lg. onion, chopped5 oz. frozen spinach1 tsp. garlic 1 tsp. thymesalt to taste
Thaw Fillo dough. cut in half while still in roll.
Saute onions and mushrooms. Add finely diced chicken. Cook until chicken is cooked. Add frozen spinach and spices. Saute another 10 minutes. Remove from heat and drain.
Unroll fillo. You will need to work with each strip individually. place approximately 2 Tbs. of filling at the end of the pastry. Roll and place on baking sheet. Bake at 350 for 20 to 30 minutes or until golden brown. Serve hot.
Makes 35 -40 appetizers.
