fresh summer tomato mozzarella salad

Ingredients
2 medium fresh heirloom tomatoes 1/2 small block Fresh mozzarella cheese sliced15 - 25 fresh basil leaves3T balsamic vinegar2T olive oil2T red wine dash salt
Directions
Cut tomatoes into thin wedges or in half and then into slices. Mix the tomatoes and mozz in a dish, then cut the large leafs of basil into thin strips. Add the rest of the ingredients. Taste, then adjust the oil and vinegar to taste.

If you can, get a couple of contrasting colors of tomatoes - I used burgandy, green, and yellow. Also using a purple ruffle basil in addition to the typical green.

    I brought this to work for a potluck today and everyone raved about it. I exchanged the red wine for red wine vinegar and cut the balsamic to 1 Tbsp and left out the salt. It was great! - 7/3/09
