Greek Meatball Soup

Lauras Lean Beef Ground Beef 8% fat, 16 oz Long grain white rice, 1/3 cupOnions, raw, .5 cup, choppedFresh chopped mint leaves, 2 tablespoonsParsley, 1 tbsp Egg, fresh, 1 large Salt & Pepper to tasteBeef Broth- 4 cupAvgolemono SauceEgg, fresh, 2 large Lemon juice, 3 tbsp Hot broth (From above)
Mix first 6 ingredients (plus salt & pepper). Form into small meatballs (1 1/4"). Drop into simmering broth (broth should cover-- can add water) Simmer 35 to 40 minutes.
For sauce:
In bowl, using electric mixer beat eggs until frothy. Add lemon juice and beat in. SLOWLY
(a little at a time) add 2 cups of hot broth to egg/lemon while beating constantly. Pour hot sauce into soup and stir quickly. Heat soup (don't boil) and serve. Do not cover soup until cool or eggs may curdle.
