American Chop Suey

Ingredients
1 cup onions, diced1/2 cup green or red peppers, diced2 T. olive oil3 cloves garlic2 T. italian seasoning2 cans diced or whole tomatoes12 oz. ground beef, 95% lean1 lb. whole wheat elbow pasta, cooked
Directions
Brown lean ground beef. Transfer to colander and rinse. Set aside. In the same skillet, sauté onion, pepper, and garlic in olive oil. Add Italian seasoning, salt and pepper to taste. Add canned tomatoes and ground beef. Bring to a boil, lower to medium low, and simmer for approx. 30 minutes.
In a separate pan, cook pasta. Whole wheat elbows work best. Drain and add to beef/tomato mixture.
Serve immediately.

Serving size 1 1/2-2 cups. Serves 6.
