Falafel - Hungry Girl Style (with added oil)

Ingredients
4 cups garbanzo beans3 tbs olive oil3 teaspoons lemon juice1/2 cup whole wheat flour1 tsp baking powder3 tsp ground cumin1 tsp paprika1 tsp salt1 tsp pepper2 cups parsley (or two bunches cut up)4 tbs cilantro1 raw onion, chopped really fine
Directions
If you are using dried garbanzo beans - soak overnight, then boil for about 1 hour.

Preheat oven to 375

Mash garbanzo beans - use a food processor if yours works, trust me, it's worth it.

Add all ingredients except reserve 1 tbs olive oil. Mix together mixture.

Drizzle 1/2 of remaining oil on a baking pan and spread around with paper towel. Get about 2 tbs worth of mixture and make into small ball with your hands. Place on baking pan. You can place them pretty close to each other - they won't spread out when they cook like cookies will.

Drizzle small amount of oil on top (if you have olive oil flavored cooking spay, use instead) and bake for about 15 minutes. Then turn over each piece and bake for another 15 minutes.

Should make about 48 individual pieces.

I eat it in pita bread with yogurt and cucumber - or as a bite sized snack! Yum yum yum.

    I love falafel but have never made it because I dont want to fry. Thank you. Addl research says leftovers can be frozen, reheated in micro or toaster. Thoughts? - 2/7/12

    I love these!! I made 24 instead of 48. So So SO good :) I made a sandwich using 100% whole wheat sandwich thins, 1 tbs sour cream, 1/2 peeled sliced kirby cucumber and two falafel balls. OMG! Tastes like take out :) Thanks for sharing!! - 6/21/10
