Roasted Red Potatoes - PCRM Fast Start

Ingredients
4 medium red potatoes2 tsp olive oil1 fresh or dried rosemary, to tastesalt to tastefreshly ground pepper to taste
Directions
Scrub potatoes and cut into 1/4-inch rounds. Place in a 9"×13" baking dish and sprinkle with oil. Toss to distribute oil, then sprinkle with rosemary, salt, and black pepper. Bake for 15 minutes, then turn with a spatula. Continue baking about 20 more minutes, until tender when pierced with a fork.
