Huminbrd's Hodge Podge Veggie Soup

Ingredients
1 can Swanson Lower Sodium Beef Broth1 can Butter beans, drained and rinsed1 can Farmer''s Market Organic Butternut Squash Puree1 can Bush's Best Reduced Sodium Garbanzos, rinsed and drained1 can Del Monte Diced Tomatoes - no salt added1 medium eggplant, cooked and cut in large squares3 cups frozen chopped collards1/2 large onion, chopped3 large stalks celery, chopped, including leaves15 small baby carrots, whole1/4 tsp cinnamon1/2 tsp cayenne pepper1 tsp crushed rosemary1/2 tsp garlic powder or 2 cloves chopped fresh garlic1/2 tsp cumin2 cups water4 oz colby cheese
Directions
Put everything except the cheese into a pot and simmer, covered, one hour. Top with grated cheese and serve.
