Blueberry muffins

Ingredients
2 cups spelt flour3 tsp baking powder1 1/2 cups egg whites1/2 cup puree apples (red only)1/8 tsp sea salt1 1/2 cup fresh blueberries (oven roasted 2 minutes at 400 degrees)1/4 tsp baking soda2 tbsp soy milk
Directions
roast blueberries for 2 minutes at 400 degrees
Mix all dry ingedients together
mix in egg whites and apple puree
add blueberries
add soy milk

use non-stick cooking spray or paper baking cups
pour mixture into muffin tins
bake at 390 degrees for 17 minutes
