Ingredients:450 g blackberries1/3 cup granulated Xylitol1/2 teaspoon grated orange zest1 3/4 cups white flour
1 tsp baking soda½ tsp baking powder½ tsp salt½ cup unsweetened applesauce½ cup white sugar or sugar substitute1 Tbsp vegetable oil1 egg substitute, made up as liquid1 cup alpro soya yoghurt1 lemon, juice and zest of
Directions
Preheat oven to 180˚C. Grease pudding bowl. Set aside.

Place berries, sugar and orange zest in a large bowl. Lightly toss until thoroughly combined. Spoon into the pudding bowl. Set aside.

Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar. Add egg and beat well, then stir in lemon zest and juice, mix in yoghurt. Alternately stir liquids into flour mixture in stages.

Cover berries with batter. Bake 20-25 minutes or until a knife inserted into the cake comes out clean.
