1 Tbl canola oil2 cloves garlic, mashed,5 cup diced onion.25 cup diced celery1.75 cup mushrooms of choice360 grams silken tofu1 Tbl Cumin1 Tsp Cayenne Pepper2 Tsp Mustard Powder.5 Tsp lemon juice.5 cup wheat germ.25 cup toasted walnut pieces.25 cup sunflower seeds.5 cup rolled oats.3 cup cornmealsalt to taste
Cook the mushrooms, onion, garlic, and celery in the oil until they are soft. Combine them with the tofu, spices, and lemon juice, and pulse a few times in a food processor. Transfer this mixture to a bowl, and add wheat germ, nuts, seeds, oats, and cornmeal. Add salt to taste. Mix well. Shape into patties, and bake about 7minutes on each side at 350 degrees. Mixture makes about 7 patties that are 3 in. in diameter.
