Quorn, Artichoke & Tapenade

Ingredients
- 14.5 oz can diced tomatoes with jalepenos- 1/2 jar of Green Olive & Tomato Tapenade (10 oz * .5 = 5 oz)- 13.75 oz can Artichoke Hearts in water- 12 oz bag of Quorn tenders- 1 cup chopped red bell pepper- 1 medium onion chopped- 2 cloves garlic- 2 cups fresh spinach
Directions
Sautee onions, peppers and garlic in olive oil until onions are transparant. Add artichokes and quorn nuggets and cook on medium high for about 5 minutes. Add tapenade and cook another 3 minutes. Add diced tomatoes and spinach and cook for another 5 minutes or until spinach is cooked through.

    Awesome! I made this tonight and even my meat eating husband wanted another helping. I served it with brown rice and and used low salt tomatoes and added a little black pepper. I am not big on hot food. - 2/27/10
