Gardner Family Curry Chicken and Apples

Ingredients
2 Large Skinless Boneless Chicken Breasts1 Small Onion (diced)3 small apples (cubed)1/4 C Raisins4 TBSP Curry PowderCornstarch1 Can Lite Coconut Milk1/4 Cup 1% milk1/4 tsp Ginger1 tsp Salt4.5 Cups Brown Rice
Directions
Par boil 2 large boneless skinless chicken breasts slice into thin slices and set aside

Spray LARGE skillet with Pam, add onions, chicken broth, coconut milk, milk and spices..thicken with cornstarch..

once sauce thicken add Chunks of Apple, Raisins and Chicken.. cook for 10 -15 minutes on medium heat. Serve over 3/4 cups brown rice (included in Calorie Count!)
