Tom Yam soup (without condiments)

Ingredients
waterlime juicedried chilisfresh cili padi (birds eye chili)fish saucethai chili pastekaffir lime leaveslemon grass
Directions
Bring water to a boil. Add lemon grass and kaffir lime leaves and allow to simmer for 5–6 minutes.

Put in condiments of choice eg. prawns, fish, mushrooms and add dried chillies.

Cook for 4–5 minutes. Add chilli paste, fish sauce, cili padi and lime juice. Adjust seasoning before serving. Dish out piping hot soup to serve with garnishing.
