Blueberry Spice Muffins (sugar-free)

1 c. barley flour1 c. oat flour3 tsp. baking powder2 tbsp. ground flax seed6 tsp. water1 c. Ideal no calorie sweetener1 c. seltzer (plain)1/4 c. olive oil1 c. frozen unsweetened blueberries
In a small bowl, add ground flax and water. Stir and let sit while you mix the rest of the batter. (The flax is an egg replacement.)
Mix all dry ingredients together. Sifting is recommended for an airier finished product, but not necessary.
Add wet ingredients (include the flax mixture here) to dry and stir just until incorporated.
Stir in blueberries.
Divide batter into 12 paper-lined muffin tins.
Bake about 25 min. at 375.
