Lisa's Dbl Turkey & Vegetable Tomato Sauce

1 pkg Turkey Italian Sausage (Sweet or Hot) - 19.5 oz14 pkg Ground Turkey - 20 oz2 - 28 oz can Tomato Puree2 - 14.5 oz can Stewed Tomatoes - Italian Style12 oz can Tomato Paste4 cloves garlic - crushed2 cup sliced mushrooms3 lg yellow or orange bell peppers3 lg zucchini/ Italian squash1 Tbs Basil1 Tbs Oregano1 Bay Leaf1 tsp Kosher Salt1/4 cup sugar (white) - optional
In large pot, place ground turkey and turkey sausage that you have removed from skin and broken up in pan. Brown meat until it is fine crumbles. Add tomato puree, stewed tomatoes, tomato paste, crushed garlic and seasonings. Add sugar if desired. Allow to come to a boil.
Cut all vegetables into 1" size pieces. Add to pan of sauce. Reduce temperature and allow to simmer for 15 minutes, stirring occasionally. Taste and add kosher salt as needed. Simmer another 15 minutes.
Serve with any pasta or in lasagna.
