Ranch Potatoes

Ingredients
Ranch Dressing/Dip mix -1 packet1 large regular baking potatoes.1 tbs of extra virgin olive oil.
Directions
wash and peel potatoes.
slice potatoes into 1/8inch slices.
coat the potaoes in 1 tbs of EVOO.
Use 1/3 ranch dressing packet (or more to taste) - pour mix over potatoes and make sure they are completely covered.
Bake a 425 for 25 minutes or till done.
