Pad Thai Veggies with rice

1 1/2 c. frozen mixed veggies 1 c. white rice 4 tbsp. peanut butter (smooth or crunchy) 1/2 jar of Thai kitchen original pad thai sauce
Cook frozen veggies according to package without adding salt or butter. Cook rice according to package as well do not add butter. When veggies are cooked drain and add 1/2 jar of thai sauce and heat medium. When rice is finished cooking - rise, and the put back on stove on med heat and mix in the peanut butter. Allow to peanut butter to melt and stir into rice. Once the peanut butter as been mixed into the rice add rice to the veggies and sauce, heat for a another 2 mins and serve. Nan goes very well on the side with this dish.
