Minestrone

Ingredients
1 large onion, chopped4 carrots, sliced3 stalks celery, sliced1 tbsp. olive oil6 oz. can tomato paste14.5 oz. can chicken, beef, or vegetable broth24 oz. can pinto beans, undrained10 oz. pkg. frozen green beans2-3 cups of chopped cabbage1 medium zucchini, sliced8 cups water2 tbsp. parsley2 tbsp. Italiam spice1 tsp. salt1 tsp. pepper3/4 cup of acini de pepe (small round pasta)grated Parmesan cheese
Directions
Saute onion, carrots, celery, and garlic in oil until tender. Combine all ingredients except pasta adn cheese in crock pot. Cover. Cook 4 to 5 hours on high or 8 to 9 hours on low, adding pasta one hour before cooking is complete. Top individual servings with cheese.
