Peel and chop onion, carrots, and celery to medium dice.

Thoroughly scrub potatoes and dice (about 1/2 inch cubes).

Cut tilapia fillets into pieces (I split each lengthwise and then cut the thin half into quarters - thick half into sixths).

Place all ingredients except tilapia into soup pot over medium-high heat. Brings to boil and reduce heat to medium-low (maintain low simmer). Cook for 30 minutes.

Turn off heat and add tilapia, turning ingredients to submerge fish. Allow to stand for about 5 minutes.

this was easy and very tasty! I blackened my tilapia before adding to soup mixture and also added about 2 tbsp of creole seasoning and a little more salt. - 6/6/14
