-4 chicken breasts (boneless, skinless)-1 3/4 cup coconut milk-8 Tbsp curry paste-1/4 cup low fat plain yogurt
Preheat oven to 375.
Pour coconut milk into a mixing bowl. Mix in curry paste and yogurt. Arrange 4 chicken breasts in an oven safe dish. Pour mix over chicken breast.
Bake for 35 minutes.

Will definitely make this one again. Great base recipe to start with! We cut the chicken into bite size pieces for easy plating, also cook a little faster. Next time we will let it marinate in the curry sauce for a couple of hours before cooking, Could also add some carrots, potatoes ect... - 3/2/14
