Hanne's Potato Soup

Ingredients
per person:1 tsp canola oil1 medium potato4 Tbsp chopped onion1 tsp chopped garlic1/4 cup chopped carrot4 Tbsp chopped celery1 cup vegetable brothherbs and spices to taste
Directions
Heat oil, saute onions and garlic, add the other vegetables and broth. Bring to boil and simmer until vegetables are soft. Season to taste. You can mash the potatoes if you like.

This is suitable for vegetarians; add meat if desired.
