Modified Taco Style Lentils and Brown Rice

3/4 cup dry lentils3/4 cup brown rice4 cups vegetable brothI Tablespoon each: Chili Powder, Cumin, Minced Onion, Garlic Powder1 Tablespoon Olive Oil1/2 Cup Salsa Verde (calculated using Xochitl brand)
Combine all the ingredients and place in the slow cooker for almost 3 hours on high. Stir occasionally. Nearly all the water should be absorbed - be careful not to cook it too long as it will be too dry and stick.
Makes 6 servings approx. 3/4 cup each.
Great as a side or I like to take a LaTortilla 100 Calorie Tortilla, warm it up, sprinkle a 1/4 cup shredded 2% cheddar or Mexican blend cheese over the tortilla and let it begin to melt. Add 3/4 cup of the Lentils and Rice on half the tortilla, fold in half. Cut for slices for a tasty and filling Quesadilla.
