Strawberry Glaze Pie

Ingredients
2 Baskets of fresh strawberries1 Cup of sugar (sub splenda for lower calories)2 Tbsp cornstarchjuice from 1 lemon1 (9 inch) refrigerated pie crustfat free cool whip (optional)
Directions
Wash and hull berries. Place half of them in a saucepan and crush with fork or pastry blender. Stir in sugar, cornstarch and lemon juice. Cook and stir over medium heat until mixture thickens and clarifies. Cool. Slice remaining berries and gently arrange them in pie crust (or just mix with glaze) Pour glaze over berries (or pour mixture into crust) and chill for several hours.
Garnish with fat free cool whip (not included in nutrition info)

    I thought this was sooo much better than the store bougt glazes. It did not have a funny aftertaste. Was perfect for dessert, especially in individual mini crusts (helped with portion control) - 5/8/11
