Orzo Pasta Salad

Ingredients
Ingredients:2 cup Orzo Pasta (uncooked)6 oz can medium Black Olives2 cup Carrots, raw, strips or slices2 oz Smoked Honey Ham1 oz Havarti Cheese (or favorite one)2 tbsp Capers, canned, drained1 cup Cucumber (peeled), chopped1 medium Avocado, California (Haas)1 cup Red Ripe Tomatoes, chopped
Directions
Cook orzo pasta per instruction. Drain and set aside to cool. Chop vegetables, ham, and cheese into bit size pieces. Add to cooled pasta. Add your favorite low fat Italian Dressing or vinagerette. Toss together. Eat or let cool for 2 hours before serving. Makes 8 1-cup servings.
