Chicken Fillet Poached with Horseradish Cream

5 chicken breastshalf carrot, slicedhalf stick celery, sliced2 cups chicken stock50 ml dubonnet4-5 tsp cornflour mixed into a little water90 ml soya kreem2 tsp dreamed horseradish (or fresh grated)nutmeg, pepper and salt
Place half the stock with the celery and carrot into a saucepan and boil for 8 mins
Add remaining stock, bring to the boil. Add chicken and simmer gently for 10 minutes
Remove chicken to a warm plate, slice into medallions, cover and keep warm.
Strain the sauce into another saucepan. Add Dubonnet and boil until reduced by half.
Add soya kreem, bring to boil. Add cornflour liquid. Whisk till smooth and thick.
Add nutmeg, pepper and salt to taste.
Serve with rice and steamed vegetables.
