Hanne's Lentil Soup

Ingredients
1 cup dried lentils1 medium potato, cut into small pieces1 medium carrot, cut into small pieces4 Tbsp chopped raw onion4 cups vegetable brothSalt, pepper, herbs, vinegar or mustard to taste
Directions
Put lentils and vegetable broth into a pot, bring to boil and simmer for about 45 minutes. Add the rest of the ingredients and cook until lentils and vegetables are soft, about 15 more minutes. Season to taste.
