Introduction

Ingredients

Salty brine:
4 to 5 cups very hot water
2 Tbsp minced garlic
Enough sea salt to make the water very salty
Sweet brine:
1 cup water
2 cups whit vinegar
2 cups stevia in the raw
3 Tbsp lemon juice
3 cucumbers
2 onions
10 garlic cloves
Directions
Peel & dice cucumbers
Dice onion
Chop garlic cloves to desired size
Set veggies aside.
In a large bowl dissolve enough sea salt into about 4 to 5 cups of very hot water & add the minced garlic.
Put all cucumber & onion into the salty water & let sit for 30 minutes.
While waiting for cucumber & onion to sit in salty water take out another large bowl.
Add 1 cup water, white vinegar, stevia, lemon juice, & garlic cloves to this mixture.
Whisk it well until everything except the garlic dissolves together leaving a very sweet solution.
After the 30 minutes in the salty brine strain the cucumber & onions & wash with cold water.
Now place them in the sweet solution (don't worry about any minced garlic getting in; just adds to the flavor).
Toss out the salty brine.
Put the sweet solution w/ cucumbers & onions into the fridge for 30 minutes or more.
Essentially you end up storing the salad in the sweet solution, so you can just leave it in there for good.
Serving Size: Makes 6 - 1 Cup servings
