1 (15.5-ounce) can diced no salt tomatoes1 1/2 pounds boneless, skinless Chicken Breast, cut into 1-inch chunkssalt & pepper to taste1 tbsp Olive Oil1 medium Onion, chopped fine1 tbsp garam masala1 tsp cumin1/2 tsp chili powder1 tsp ground coriander1/2 tsp curry powder2 tsp balsamic vinegar1 packet Stevia 10 curry leaves, optional (available from Asian & Indian grocers & some supermarkets)2 cloves Garlic, minced2 tsp fresh Ginger Root, grated1/2 cup nonfat Milk,1/4 cup raw Cilantro, chopped
Pulse tomatoes in blender or food processor until coarsely ground. Pat chicken dry & season with salt & pepper to taste. Heat oil in large skillet over med-high heat until just smoking. Brown chicken on all sides, approx 5 minutes.
Transfer to plate.
Add onion to skillet & cook over med heat until softened, approx 5 minutes. Add garam masala, garlic, spices& curry leaves, cook 30 seconds. Add tomatoes & simmer approx 3 minutes. Stir in milk, vinegar & Stevia. Simmer uncovered 15 to 20 minutes.
Serve over brown rice or quinoa.
