1/2 cup unsalted butter, room temperature1/2 cup low-fat cream cheese, room temperature3 cups confectioner' sugar, sifted if lumpy1 tsp pure vanilla extract1 lemon, grated and juiced.
1. Beat butter and cream cheese in large bowl of electric mixer until light and fluffy.
2. Add confectioners' sugar and beat at low speed until well blended. Beat in vanilla, grated lemon rind, and lemon juice until smooth.
