6 Chicken Thighs1 cup of onions (slivered)2 TBSP Olive or Canola Oil3 cups of cooked rice3 TBSP Curry Powder1-2 C Chicken broth3 med or 2 lg potatoes peeledSalt & pepper to taste
Start by steaming rice. While it is steaming, cut up the potatoes cubed and coat with a little bit of flour and curry powder. Take thighs, remove skin and fat. Coat with salt , pepper, & curry powder. Add oil to pan and add onions and cook until clear. Add the thighs brown them on both sides and add the onions back in there. Pour enough chicken broth in the skillet to just the top of the chicken breast, do not cover them. Add the coated potatoes. Reduce the heat and simmer until potatoes are tender.
Spoon over steamed rice.
