Frozen Gelatin Popsicles

Ingredients
1 regular size package of sugar-free gelatin1 tub of Crystal Light or other sugar-free drink mix OR 4 stick packets of sugar-free drink mix - the kind you add to a 6 oz. bottle of water2 c boiling water1-3/4 c cold water
Directions
Heat two cups of water to boiling on the stove or for about 4 to 5 minutes in the microwave

Add the water to the package of sugar-free gelatin and the tub or 4 stick packets of sugar-free drink mix

Stir until the gelatin and drink mix everything is disolved

Add 1-3/4 c. cold water and blend

Pour into popsicle molds and freeze

I don't have popcicle molds so I use the 3 oz plastic bathroom cups and insert in a popcicle stick and line them all up in a baking dish to keep them from tippping in the freezer. The popsicles are not as pretty to look at and the sticks are at an angle, but this way is my favorite way as I can just slip off the plastic cup (running it under water for a few seconds helps if it's too frozen) and I don't have to wash any molds.

You can mix different flavors with the gelatin and drink mixes to suit your own tastes or have more than one flavor on hand at a time. With all the flavors available from strawberry, lemonade, lime, mixed fruit, grape, cherry, peach and almost any imaginative combinations, you're sure to find something you'll love. For instance, I love the lemon or lime gelatin coupled with lemonade, pink lemonade or raspberry lemonade for a refreshing citrus treat with a slight bite. If you love really sweet, try the cherry or black cherry with cherry or cherry lime drink mix. For the more sophisticated cravings, pair the cranberry gelatin with cranberry or cranberry apple drink mix.

You can also add frozen, crushed or cut-up fruit to the popsicles if you'd like for a special treat.

This recipe makes 12 to 14 popsicles of the 3 oz cup size, filling the cups 3/4 to 4/5 full. I've based the nutritional counts on this portion.
