German Apple Puff Pancake (1/6 pan svg)

Ingredients
2 Cups firm apples--chopped into 1/4 inch slices3 Tbl butter1/8 C sugar1 1/2 Tbl cinnamon (sometimes I also add nutmeg and/or cloves and/or ginger)6 eggs - room temperature1 C non-fat milk1 C flour1/2 tsp salt
Directions
1 - Preheat oven to 425 degrees F
2 - Mix Cinnamon and Sugar together
3 - Prepare the apples--you can peel them or not, cut into 1/4 inch slices (and I often then 1/2 the slices)
4 - Mix eggs, milk, flour and salt into a batter - set aside
5 - Put 9 x 13 pan (lightly greased with spray) into the hot oven.
6 - Melt butter in a skillet - add the apples, stir. Sprinkle cinnamon mixture to evenly coat the apples, stir. Saute the apples 4-6 minutes until they soften and become light golden brown on both sides.
7 - Pour the apple mixture into the hot 9 x 13 pan to cover bottom of pan. Pour the batter mix over the apples - spread it to cover as needed. Place pan back in hot oven.
8 - Bake approximately 17-18 minutes--don't open door while it's baking. The 'pancake' should no longer appear wet on top.
9 - To serve, invert the pan onto a large platter cut into 6 large pieces - can sprinkle with powdered sugar or serve with syrup or caramel sauce (none of these toppings included in nutritional info).

To increase 'health' I will often add other fruits with the apples--it's quite tasty with pears as well--and some dried cranberries mixed in the last couple of minutes of cooking the fruit. I also like to make a 'syrup' by boiling down berries and serve the berries instead of other toppings.

You can also use egg beaters or egg whites and less whole eggs to bring down fat and calories--but since we have chickens, I use whole eggs.
