Potato Leek Soup

6 Potatoes (cut in cubes)1 large Leeks (sliced)6 cups Vegetable soup stock (nutrition accounts for 3 cups from homemade + 3 cups water + 1 TBPS veggie broth powder)3 tablespoons margarine (could be reduced to 2 or use reduced fat)Salt and pepper (optional, salt not included in nutrition)Soy milk - 3/4 cup (optional, included in nutrition)Cilantro for garnish
Heat the margarine in a large pot, and add in the leeks, and cook until the leeks are soft.
Add in the potatoes, and soup stock. Bring to a boil. Lower the heat and let it cook for 20 minutes or so until potatoes are soft.
Puree the solids in a food processor, and slowly add in the soup. When done, put back into the pot and add salt, pepper, and soy milk.
Garnish with cilantro.
Makes about 8 cups
