Perfect PAncakes (Vegan)

Ingredients
1 1/4 all purpose flour2 t baking powder1/2 t salt1 t ground cinnamon2 T canola oil1/2 cup water1 cup plain soy milk2 T maple syrup1 t vanillacooking sprayTopping5 med strawberries1/3 c bluberries1/8 c raspberries1 t vegan sugar
Directions
Preheat a large skillett for at least 2 minutes.
In a large bowl mix together flour, cinnamon, baking powder, and salt.
MAke a well in the center and add oil, water, milk, maple syrup, and vanilla.
Mix just til the ingredients are combined.
Spray the pan with a lite coat of cooking spray.
(make topping)
pour pancakes in one at a time.
Cook until bubbles form and the top looks somewhat dry. flip over for another minute.


Topping
Slice strawberries and place in bowl with bluberries and raspberries. shake sugar over the top and let sit til pancakes are ready.
