Ingredients
Tilapia Filet2 large scallops2 onion slices1/4 red pepper sliced thin1 baby bella mushroom sliced thin1/4 zucchini sliced thin3 cherry tomatoes halved4-5 spears of fresh asparagus2 lemon slices (seeds removed)3 cloves garlic1 tsp olive oil2 Tbsp Marsala Cooking wineSprig Fresh Oregano (.5 tsp dry)Sprig Fresh Rosemary (.5 tsp dry)Fresh Basil Leaf (.5 tsp dry)
Directions
Spray large piece of heavy duty foil w/olive oil. Add fish and scallops. Season with lemon pepper & salt. Add rest of ingredients. Close foil to seal in steam. Bake or grill at 400 for 20 min

    This was fantastic and I was even missing the cherry tomatoes and zucchini. I did vary the spices a little but this recipe lends itself to many tasty variations. It's also a great do ahead recipe to put in the fridge and cook later on or the next day. YUMMY! - 4/22/08

    Thanks for the great recipe idea! I made this the other night but with a few variations. I added in a few prawns, leeks instead of onions and used Cajun Seasoning on the fish rather than the other herbs and baked it in foil on some Basmati Rice which turned out beautifully and was very filling too! - 2/12/08
