Carrot Bars with Baby food

Ingredients

4 eggs2 cups Sugar (I use Splenda for baking)2 1/2 cups flour1/2 teaspoon of salt2 teaspoons of baking soda2 teaspoons of ground cinnamon1 1/2 cup Oil (I use extra virgin olive oil)3 jars/tubs of carrot baby food1/2 to 1 cup nuts (optional) ( I do not use)
Beat eggs and sugar together until fluffy. Then mix in the rest of the ingredients.
Pour into a cookie sheet and bake at 350 degrees for 30 to 40 minutes (check by sticking a toothpick or knife into the center of the bars. When the toothpick or knife comes out clean they are done).
allow to cool some then use the Cream Cheese Frosting recipe to top.
Enjoy!
