Spanish Potato Omelet

Ingredients
4 medium potatoes, peeled12 eggs1 small onion, chopped4 green onions, chopped1 TBSP fresh parsley, chopped12 pieces canadian bacon or ham, diced1/4 tsp pepper2 TBSP butter1 TBSP oil1/2 tsp salt
Directions
Peel and slice potatoes thinly. Chop onion, green onion and ham or canadian bacon and saute with potatoes in an oven safe frying pan with 2 T butter and 1 T oil for about 10 min. or until brown. Beat 12 eggs, add pepper, salt and parsley and pour over potato mixture in pan. Put in oven at 400 degrees for 20-25 min.
