16 oz Acini de Pepe noodles1 C Sugar2 Tb Flour1 tsp Salt2 eggs beaten1-3/4 C Pineapple Juice (Drained from pineapples for recipe)1 Tb Lemon Juice2 20 Oz cans Pineapple tidbits, drained1 20 Oz can Pineapple chunks, drained3 11 Oz cans Mandarin Oranges1 8Oz container Non-dairy frozen topping
Cook Acini de Pepe noodles per instructions. Drain and set aside to cool.
Drain pineapples (reserving juice) and mandarin oranges. Combine in separate container and refrigerate.
In large saucepan, combine flour, sugar and salt. Slowly add pineapple juice and beaten eggs. Heat on medium stirring often until thick. Remove from heat and add lemon juice. Let cool to room temperature.
Combine pasta and sauce. Refrigerate overnight (or at least 8 hours) until chilled. Combine pasta mixture and fruit. Add whipped topping. Serve
Makes approximately 24 servings.
